Edamame Hummus

Servings: 6

Serving Size: ¼ cup

 

2 cups shelled edamame

¼ cup plus 1 tablespoon olive oil

3 tablespoons roasted garlic tahini

3 tablespoons fresh lemon juice

2 tablespoons + 1 teaspoon Kikkoman®️ Less Sodium Soy Sauce

2 tablespoons water

2 cloves garlic

½ cup cilantro leaves

 

Cooking instructions: In a small saucepan, bring 4 cups water to a boil. Add shelled edamame and cook for 5 minutes. Drain and rinse to cool the edamame. Add edamame and remaining ingredients to a food processor and process until smooth. Place edamame hummus in an airtight container and let sit in the refrigerator for 24 hours before serving for best flavor. Serve with rice crackers and baby carrots, if desired.
